The fruit tart without cooking is the perfect dessert for the summer, without turning on the oven or the stove, and in no time, you will get a fresh tart to prepare even at the last moment. I used the classic base that is used to make cheesecake, digestive biscuits and butter, and for the filling I chose a mascarpone cream without eggs, then I decorated the tart with fresh fruit and in a very short time I got a sweet mister that delighted my diners after a light summer dinner;) I leave you to the Monday dessert, hoping it will sweeten your day with its goodness and its colors. How to make fruit tart without cooking
Chop the cookies in a mixer.
Put the chopped biscuits in a bowl with the melted butter and mix until a homogeneous mixture is obtained.
Pour everything into a pie mold (I used one with a removable bottom: alternatively you can line a normal mold with parchment paper, leaving it "long" over the edges, so you can then use it to pull out the tart) and compact the base and edges well. Then put in the fridge to set for 30 minutes.
Meanwhile, whip the mascarpone with the sugar
Whip the cream and add it to the mascarpone cream.
Mix with a spatula to mix everything well.
Take the biscuit base from the fridge and pour the mascarpone cream inside. Level well then put the tart in the fridge to harden for an hour.
Now peel the fruit and cut it into small pieces.
Garnish the tart with the pieces of fresh fruit arranged in a radial pattern, then remove from the mold, bring to the table and serve.
If you do not serve the tart immediately, brush the fruit with a little apricot jam dissolved in a saucepan with a drop of water, with lemon juice or with some jelly for pies.
