The Neapolitan sandwiches, as the name suggests, are typical rustics of Naples. These are delicious rustic dishes filled with cheeses and cured meats that are never lacking in buffets and that from today you can also make with the help of your Thermomix. The recipe is simple and fast, the longest times are instead those of leavening, followed by cooking in the oven for just about 20 minutes.
How to make Neapolitan sandwiches with the thermomix
Put milk, water and yeast in the jug, and work for 30 sec. at 37 °, vel. 3.
Add half the flour and knead for 2 min. at vel Spiga.
Then add the rest of the flour, 2 tablespoons of lard, salt and pepper, and work for 3 min. at vel Spiga.
Cover with a cloth and let it rest for 1 hour.
Take the dough and roll it out into a rectangular sheet of about 3 mm thick.
Cover the pastry with the salami and diced provolone and sprinkle with grated parmesan.
Roll up the pastry and cut it into a dozen rounds.
Put the sandwiches on a baking sheet greased with oil, cover with a cloth and let them rise for another 2 hours.
Finally brush the sandwiches with the remaining lard, bake in a preheated oven at 180 ° C and bake for about 20 minutes.
Let it cool before serving.
