Method

How to make asparagus quiche

Clean the asparagus, then boil them for 5 minutes in boiling water

Cut the asparagus into small pieces and keep the tips aside
Brown the asparagus in a pan with a knob of butter, then add salt and pepper


Prepare a mixture by beating the egg yolks with the cream and Parmesan in the bowl

Add the chopped asparagus and mix (keep the tips aside)

Roll out the puff pastry and with a pastry cutter cut out circles of puff pastry


line the buttered and floured molds with the pastry (I used new silicone molds that do not need this operation) and prick the base


Pour the filling on the base of the pastry then bake the quiche with asparagus in a preheated oven at 180 °

Bake for 20 minutes, then remove from the oven, decorate the mini quiche with the asparagus tips and serve
