How to make eggplant roses
Trim the aubergines, cut them into longitudinal slices of about 3 mm and then grill them on a plate.
Set them aside and let them cool
Unroll the puff pastry on a flat surface and cut it into rectangular strips
Place the grilled aubergines side by side, covering half of the pastry
Season with salt and pepper and then cover with a little cooked ham and grated Parmesan.
Close the dough in half, then roll it up on itself until it forms a rose
Place the aubergine roses on a baking sheet lined with parchment paper, then sprinkle them with a drizzle of oil and bake in a preheated oven at 200 °
Cook for 20 minutes, then lift the puff pastry roses and serve
