Yesterday afternoon I had guests and a silicone muffin mold to inaugurate, so with a few ingredients found in the fridge, I made ricotta and caramel muffins in just 10 minutes. Soft, fragrant and light, the ricotta muffins are my Monday sweet, you can serve them with a sprinkling of icing sugar or with a pour of caramel, in both cases, they will be delicious. Good week everyone and good preparation of the ricotta muffins, this morning I soaked the last two in coffee milk .. a real pleasure;)
How to make ricotta and caramel muffins
In a large bowl mix the flour with the sugar and baking powder
Separately mix the eggs with the milk and seed oil. Pour the liquid ingredients into the dry ones and mix with a wooden spoon
Add the ricotta and caramel and mix gently to the mixture.
Fill the muffin tins with the mixture 2/3 of their height
Bake the ricotta and caramel muffins in a preheated oven at 180 ° and bake for 20 minutes or until, inserting a toothpick into the muffin, it comes out clean and dry.
Allow to cool then sprinkle the ricotta and caramel muffins with icing sugar and serve
